Marinated Cheese

Well, I had big plans for an end of the year post, but it will have to wait. We were out of town for a few days and then we extended our trip. We have just arrived home and are getting ready for an evening of "boys", lots of boys at our house tonight (I would not have it any other way!). However, I wanted to put this yummy appetizer out there for your weekend activities. My friend Mary makes this and it is now one of our favorites. The exact recipe is from "All Recipes".

Marinated Cheese

1/2 cup olive oil
1/2 cup white wine vinegar
1 (2 ounce) bottle diced pimento drained
3 tablespoonful chopped fresh parsley
3 tablespoonful minced green onion
3 cloves garlic minced
1 teaspoon sugar
3/4 teaspoonful dried basil
1/2 teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese (I use sharp)
1 (8 ounce) package of cream cheese (cold, I put mine in the freezer for a bit)

In a jar or container with a tight lid combine all ingredients except cheese, shake well, set aside.

Cut the Cheddar cheese and cream cheese length wise and then into 1/4 inch squares, (repeat with cream cheese). Arrange cheese in an alternating pattern in a shallow dish in 2 parallel rows. Pour marinade over cheese, cover, refrigerate for at least 6 hours.

Serve with your favorite crackers.
