Fall Favorite....Sweet Potato Black Bean Stew

Sweet Potato Black Bean Stew

Ingredients

2 tablespoon olive oil
4 cups diced sweet potato
3 cups diced onion
4 tablespoons chili powder
2 tablespoons minced garlic
4 teaspoons ground cumin
1 teaspoon salt
2 cans 29oz. diced tomatoes
2 cans 15oz black beans rinsed and drained
6 cups unsalted chicken stock 
sour cream
cilantro

Instructions

Heat oil in a dutch oven.  Add potatoes and onion, saute about 5 minutes.  Add chili powder, cumin, garlic, and salt; continue sauteing for 1 minute.  Add stock, tomatoes, and beans to pan; bring to a simmer.  Reduce heat and partially cover.  Simmer for 20 minutes.  Serve with sour cream and cilantro.

This has quickly become a family favorite at our house.  I usually go heavy on the potatoes to give it just a little more bulk, also, I use what ever chicken stock I have in the house.  Last night I made this and served it with salad and crusty french bread.  Tonight it will be a side to panini grilled cheese, fruit, and chips.  I hope your family enjoys it as much as mine.

Mmmm, that sounds yummy! So does a panini grilled cheese. I haven't had one of those in awhile. xo
