Apple Cake, a Fall favorite....

I should have been doing a million other things, however, I decided to take a break and bake....and take a few pictures. Apple Cake is a family favorite, my Mom (who does not like to bake) made this cake for me when I was young.  The recipe is from our elderly neighbor Dorothy, she was like having a Grandma next door.  My brother and I would pick apples from her yard and her husband Klehm would make applesauce.  Apparently, the recipe for this yummy cake was passed on to us at some point.  I have not thought about them in many years, but they were certainly represent many childhood memories.  So, thank you Dorothy for your delicious cake.  By the way, the boys just finished off the last piece....we only made it a few hours with this one!

You can serve this cake plain, it certainly is moist and tasty.

Or, you can serve it with whipped cream and a sprinkle of nutmeg.  My favorite, however, is alamode!

The best part about photographing food (for me at least) is the clean up.  Yep, the clean up.  I was able to sit in the sun room and enjoy a whole piece of cake all by myself.....certainly a luxury!

Now the part I am sure you have been waiting for, the recipe.  Be warned, this is a hard core recipe, lots of sugar and oil!

Apple Cake

Ingredients

mix:
4 cups of chopped apples (I use Granny Smith)
1 cup vegetable oil
2 cups of sugar (I use 1&1/2 cups)
1 tsp vanilla
1 cup chopped nuts (optional)
2 eggs

sift:
2 cups flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt

Combine dry ingredients with the apple mixture.  Bake in a greased 9x13 pan for 1 hour and 10 minutes (I usually bake for about 1 hour) at 325 degrees.

Oh my, that looks yummy! But, holy smokes, that is a lot of sugar. I love the way you styled your photos...it's always nice to eat the props when you're done with your shots, isn't it? :)
