Ingredients
2&1/2 cups all-purpose flour
1 tablespoon baking soda
1 pinch salt
1/2 cup unsalted butter
1 cup white sugar
3/4 cup light brown sugar
2 eggs
4 ripe bananas, mashed
2/3 cup buttermilk
6oz mini chocolate chips
fudge frosting
Directions
1. Preheat oven to 350 degrees. Grease and flour 9x13 pan. In a small bowl, whisk together flour, baking soda, and salt, set aside.
2. In a large bowl, cream butter, white sugar, and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chocolate chips. Pour batter into prepared pan.
3. Bake in preheated oven 30-40 minutes until a toothpick comes out clean in the center. Remove from oven and cool on a damp tea towel (I used paper towel). Frost when completely cool.
This one is a keeper. I altered the original recipe just a touch by using a 9x13 pan, adding the chocolate chips, and the fudge frosting (yum!). This cake does not take longer than traditional banana bread , however, it is much moister. I suggest storing the frosted cake in the refrigerator, not only does it keep the frosting firm, the cool cake goes perfect with a cold glass of milk. Hope you enjoy!
