Shepherd's Pie

Shepherd's Pie (the easy way)

( this is a double recipe)
3 pounds ground beef
2 bags frozen western style veggies
2 cups sharp cheddar cheese
2 packs instant mashed potatoes
cheese for topping
salt and pepper to taste
.
1. brown ground beef and drain
2. add frozen veggies, salt and pepper to taste (cook until warm through out) then add cheese (2 cups)
3. prepare potatoes according to package
3. divide ground beef mixture (save 1/2 in ziploc for second meal...see below)
4. spread in 9x13 or 8x11 pan
5. top with potatoes (2packs) and cheese
6. bake at 350 degrees until light brown and bubbling

I freeze the extra meat, veggie, and cheese portion in a ziploc for another night!
The kids love this! It is very easy and makes two meals. You can use whatever veggies your family likes. The original recipe was from a grocery store magazine and I adjusted the ingredients to fit my families taste.

My husband loves that dish. He use to make it a lot when he was single...lol. But now, forget it - i'm the cook.
