Not one of my best photos, but definitely one of our favorite dessert/breakfasts. I took this picture to post this recipe and could not think of a better time.
Apple Puff Pancake
6 eggs
1&1/2 cups milk
1 cup flour
3 TBSP sugar
1 tsp vanilla
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup butter
3-4 granny smith apples
-Preheat oven to 425 degrees
-blend first 7 ingredients in a blender
-peel and thinly slice apples
-place butter in 9x13 pan in oven until butter is melted
-add apples, heat until a little sizzle
-pour batter over apples and sprinkle with brown sugar
-bake for 20-30 minutes or until puffy and golden
-serve as breakfast or serve as dessert with ice cream
-YUM!

My mom has been making this for my brother and I since we were kids! We called it 'the egg fluffy thing' haha... Never seen apples on it before! what a great idea.
