I have not taken many pictures of the kids this week so I thought I would share a recipe and a story.
This is our "Favorite Spinach Dip" the recipe is from my mother-in-law. This was not always my favorite, for years I made the spinach dip from the soup recipe, you know the one I am talking about. However, one day I realized, this is the best spinach dip ever, really! When Russ, was just a lad, his grandparents lived in South Carolina, peach country. The lady who lived next door to his grandparents is lovingly referred to as "the peach lady" because she always had peaches. She also had the best ever spinach dip recipe. The rest is history, the recipe has been handed down three generations and I imagine my kids will make the same spinach dip in their homes (I made it last week on request). My favorite way to serve it is with Wheat Thins (I have tried lots of crackers with this dip, but those are my fave). The best day of the year to eat spinach dip is the day after Thanksgiving with a leftover turkey sandwich...I look forward to it every year.
Favorite Spinach Dip
Ingredients
1 package chopped frozen spinach (thawed and drained)
1/2 cup chopped fresh parsley
1/2 cup greens onions, chopped
1 cup Hellman's mayonaise
1 cup sour cream
1/2 teaspoon dill weed
1/2 tsp Lawry's seasoned salt
1/2 teaspoon oregano
juice of 1/2 lemon
Directions
Combine all ingredients, marinate overnight.
(do not freeze)
