After School Sugar Cookie Bars

I don't know about you, but I have seen tons of these cookie bars on Pinterest.  Since I have never met a cookie I did not like I thought I would give them a try.  The thing I liked about this recipe is it is quick and easy and I almost always have the ingredients on hand....and they were yummy!  Not to mention cute:)

After School Sugar Cookie Bars

Ingredients

1/2 cup butter, softened
1 cup of sugar
2 eggs
1 teaspoon vanilla
2 and 1/2 cups flour
1/2 teaspoonful salt
1/4 teaspoonful baking soda
1/2 teaspoonful lemon zest
Pillsbury cream cheese frosting/sprinkles

Instructions

Preheat oven to 375 degrees. Butter/grease a 9x13 inch pan.  Combine flour, salt, baking soda, and lemon zest.  Cream butter and sugar until light and fluffy.  Add eggs one at a time, mix after each egg.  Add vanilla.  Add flour mixture to wet ingredients and mix until combined.  Press dough into prepared pan.  Bake at 375 degrees for 10-15 minutes.  Cool completely and frost.

Yum! I love sugar cookies, they are my favorite...which is weird since I only make them once or twice a year. I would LOVE these. I might have to make some!
