Plate up

Before I get started let me say that although these may not be the best foodie shots I have taken, they are some of the best recipes I have ever tasted. That being said this post is recipe heavy but worth the read.....three of my all time favorite recipes!

{Island Kabobs and Broccoli Salad}

{Island Kabobs}

1/2 cup pineapple juice
1/2 cup soy sauce
1/4 cup vegetable oil
1 teaspoon dry mustard
1 tablespoonful brown sugar
2 teaspoons ground ginger
1 teaspoon garlic salt
1/4 teaspoon black pepper
6 boneless chicken breast cut into 1 inch cubes
bell pepper, cherry tomatoes, mushrooms, water chestnuts and pineapple chunks to garnish skewers

Combine juice and next 7 ingredients and simmer for 5 minutes. Cool. Combine marinade and chicken, refrigerate for at least one hour. Prepare grill, skewer chicken and garnish. Reserve marinade. Grill over low heat for 20 minutes basting with marinade often.

This is one of our all time favorites. I double the marinade recipe so that all the chicken is completely covered while in the fridge.

{Broccoli Salad}

Topping
1 cup chopped walnuts
1 package dry ramen noodle, broken
4 tablespoons unsalted butter
brown over medium heat and cool

Dressing
1 cup vegetable oil
1 cup sugar
1/2 cup red wine vinegar
1 tablespoon soy sauce
pepper to taste
combine in container with lid and refrigerate

Salad
2 heads of medium size romaine lettuce
4-5 chopped green onion
1-2 crowns of broccoli (uncooked)

Prepare and combine just prior to serving.

The original source of the recipe is an old envelope...LOL. Yes, it is still written on the same piece of paper I wrote it on 15 years ago when my friend Susan read it to me over the phone.

{Buttermilk Pancakes}

Ingredients
3 cups flour
3 tablespoons white sugar
3 teaspoons baking powder
1&1/2 teaspoons baking soda
3/4 teaspoons salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
.
Prepare dry ingredients and wet ingredients, keep the two mixtures separate until ready to cook. Heat a lightly oiled griddle over medium heat until water droplets sizzle. Pour wet mixture into the dry mixture and mix with a wooden spoon or fork. Do not over stir. Use 1/2 cup mixture for each pancake. Brown on each side, serve warm.

Those look so good! I'm going try all three. We do a very similar pancake recipe...I might have to try this one instead :)
